Yes, in most cases you can. A travel back office system normally keeps a record of every change made to a booking, so you can open that booking and see who edited it, what it was before, what it is now, and the date and time it happened. This is usually called an activity log or an audit trail, and it sits on the booking itself, so nobody has to go digging through email to work out what went on.

What ends up in that log depends on how your system is set up. Changes your own staff make, such as editing a passenger name, changing a markup, cancelling a service or marking a payment as received, are the ones you can count on seeing. Changes that come from the supplier side, like an airline moving a flight, often arrive as a supplier message rather than a staff action, so the log will show the booking was updated without naming one of your people.

It is also worth knowing that the log is usually something only an owner or a manager can open, and that staff cannot edit or delete it. That is the whole point of keeping one. If you may need it for a dispute with a customer or a supplier, check whether your plan lets you export or print it, because reading it on screen and handing it to someone else are not always the same thing.
